Instructions:
- In a bowl, whisk together olive oil, lemon juice/zest, garlic, rosemary, thyme, salt, and pepper.
- Pour marinade over chicken thighs in a zip-top bag or shallow dish. Refrigerate for 1–4 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6–8 minutes per side or until internal temp reaches 165°F.
- Rest 5 minutes before serving. Garnish with lemon slices and herbs if desired.
